Known for their smooth, creamy texture and mild, slightly sweet flavor, these livers are perfect for making a luscious pâté, adding depth to sauces, or simply sautéing with onions for a quick, nutrient-packed meal. 

Simple Chicken Liver Pâté

1 lb Brookford Farm pasture-raised chicken livers

1 small onion, chopped

2 cloves garlic, minced

1/2 cup butter (plus extra for topping)

2 tbsp brandy (optional)

  1. Sauté onions and garlic in 2 tbsp of butter until soft.
  2. Cook the livers in the same pan for 4-5 minutes per side until browned but still pink inside. Season with salt and pepper.
  3. Add brandy (optional) and cook for another minute.
  4. Blend the livers, onions, garlic, and remaining butter in a food processor until smooth.
  5. Chill the pâté in the fridge for at least 2 hours before serving. Enjoy with crusty bread or crackers!
